cantera by Wiegand
sustainability
In October 2020, we received GreenSign Level 4 certification. The InfraCert Institute audited over 90 areas of the hotel and awarded it the second-highest award. An independent auditor reviewed the sustainability aspects of management and communication, environment (energy, water, and waste), purchasing, regionality, quality management and sustainable development, and social and economic responsibility.
For environmental reasons, we do not have minibars in our rooms or have single-serve packaging. Communication with our guests is largely digital, thus saving a lot of paper. Procurement is done locally. A CO2– and water footprint. Employees and guests are encouraged to separate waste. This has enabled the amount of residual waste to be reduced in recent years despite increased guest numbers.
Our observation: Guests and employees are increasingly paying attention to sustainable corporate management. The audit showed that we've already made considerable progress – but also that we can always do better. We're working on generating electricity through photovoltaic systems in the future. Our goal is to become climate-neutral.
In Lower Saxony, eight hotels have so far been awarded the GreenSign. These include us and our partner hotel, the Designhotel Wiegand in Hanover.

Cleaning
In March 2021, we changed our entire cleaning process. We no longer use chemical cleaning agents. Instead, we clean and disinfect with micro-dry steam, which eliminates up to 99.999 percent of dirt, dust, germs, and bacteria. The cleaning devices generate dry steam at over 190°C and emit it at up to 9 bar pressure. Since only water is used, the process is completely residue- and odor-free. The dry steam, with a water content of only five percent, penetrates the smallest microstructures, creating germ- and virus-free surfaces. The steam cleans and cares for sensitive surfaces such as wood or natural stone. Fabrics are also cleaned down to the pores. Further positive side effects include only 1.5 liters of water needed per room cleaning, and employees do not inhale any chemical fumes during cleaning.
Regional and seasonal
We source only regional and seasonal products whenever possible. Our beef comes from heifers born, raised, and slaughtered in Germany, all under species-appropriate conditions.
For those looking for an alternative, we offer our own vegan burgers and other vegan dishes. For us, going meat-free isn't a sacrifice, but rather a different kind of enjoyment.
We offer seasonal dishes to suit the season
Shopping
We're constantly optimizing our food purchasing and product use. At buffets, we always stock small quantities and restock more frequently. This ensures that no food is wasted. And if you're not that hungry, we'll be happy to pack up your leftovers for you. In recyclable packaging, of course.
Waste avoidance
In recent years, we have been able to continuously reduce the amount of waste we generate. For example, we have replaced personal care products in individual bottles with refillable, recycled pump dispensers. We try to avoid single-serve packaging at the breakfast buffet. Check-in is also paperless.
Energy saving
All our electrical appliances are energy-efficient. The kitchen is no exception. We replace any defective light bulbs with energy-saving LED technology. Motion detectors control the lighting in public areas. Instead of filling up the often-unused minibars, each guest receives a complimentary bottle of mineral water. Additional drinks are available at the restaurant bar.
Bees
In May 2021, 50,000 bees "moved in" to the roof of the annex building of cantera by Wiegands. These busy insects find their first food right next to the outdoor terrace. After the first harvest, we offer our guests our own cantera honey.
